‘Every Chef Should Train At This Spot’: Unassuming Turkish Eatery Ranks 4th on List of London’s Leading Restaurants.

Whenever curating a roll of London’s finest restaurants, one might foresee well-known award-winning venues. However, tucked prominently among these gastronomic giants is a modest salonu situated in a distant area of northern London.

An Surprise Accolade

This compact Turkish spot, specialising in the street food of Mersin, a city on Turkey’s southern coast, has been declared the fourth finest restaurant in the capital by a influential gastronomic guide. This recognition has made the owners totally astonished.

“I’m completely surprised,” remarks a family member, alluding to his parents’ hard graft that resulted in their modest place earning such a lofty spot on a prestigious 99-strong list.

The Appeal of Modesty

The compact space, which started as a basic cafe before its conversion into a buzzing food hotspot, has kept much of its earlier character. It fits just over 20 people and, aside from the vibrant live cooking performance, the interior remains mostly unchanged. “It’s a small and stocky space,” says the owner.

A Star Dish: Tantuni

Ultimately, it’s all down to the food, and this eatery certainly succeeds. The restaurant’s signature dish, tantuni, is a uncomplicated pleasure. Choice of meat—either lamb or chicken—is steamed to keep a moist, juicy consistency.

The meat is then tossed into a sizeable pan with seasonings and oil, which are added in slowly. Once the flavourful mixture heats through, handmade lavaş—a thin, flexible bread—is placed on top to soak in all the juices. Thinly sliced onions and a sprinkling of parsley go inside before the savoury meat is folded tightly inside.

The wrap is typically consumed with a drizzle of lemon or some pickles. The end result is a strong punch of flavour, with subtle hints of sumac, bold onions and rich, paprika-red oil pulling it all together.

Beyond the Basic Tantuni

Another option is yoğurtlu tantuni, where the meat-filled lavaş is chopped and finished with yogurt, tomato sauce and aromatic brown butter. A prominent food critic called this dish “among London’s few ideal, faultless dishes”.

When it comes to dessert, the eatery’s künefe is a treat. It is coated in a more modest amount of syrup than is typical, giving it a richer, nuttier and more balanced taste.

Outranking the Titans

Interestingly, this unassuming restaurant has outplaced several illustrious three-Michelin-starred venues. It finds itself close to the top of the list, following other high-profile dining destinations.

Whereas two people could easily leave the restaurant satisfied for below £25, equivalent experiences at top-tier establishments can run into significantly more than that amount.

A Philosophy of Heart

It is also among several Turkish restaurants included and is located well beyond the city’s central zones. “It’s not about luxury. London is an expensive city. It is assumption that in an expensive place you’re going to have the finest service and best food but I don’t believe in that,” says the owner.

“In my view what is crucial is hospitality, a welcoming atmosphere and a place you can be yourself and feel calm.”

The view is supported by the list’s editor, who suggested that if he were in a role of power, he would “make it mandatory to make every chef in London visit this spot as a masterclass, to teach them the traps of overcomplication, and to show what is achievable if you do just one – or three – things to their very best”.

The Story of Hard Work

Unlike many chefs heading kitchens in the list’s highest ranks, the mastermind behind the food did not apprentice at Michelin-starred restaurants. “I feel very proud of our restaurant and our mum,” concludes her son.

Numerous restaurants require years to find their footing, but this one first launched seven years ago. Its acclaim is owing to tireless, seven-day weeks of effort.

“My mum was extremely tired. She would source produce in the morning and make the food in the afternoon. Everything is made by hand; she would manage all of this. She is a solo parent and she balanced a social life but her friends would support her to encourage her. She had children and a house to manage as well. Each of these roles shaped her into what she is now: a exceptional person,” he reflects.

A Achievement for the Community

This restaurant’s accolade is likely to resonate beyond its own premises. “In my opinion a lot of people would be proud, as I am, because the Turkish community is a significant part of London,” concludes the owner, emphasising the greater importance of this culinary triumph.
